Crockpot Beef and Barley Soup

Here's a quick and affordable meal that can feed a family of four with leftovers! You can replace ground beef with ground turkey for a more affordable option. If you prefer larger pieces of meat, stew meat is perfect for this recipe. I used y gut-healing chicken stock recipe but on a pinch you can use bullion or store-bought broth. I serve this recipe with Sourdough Tortilla.  I am sharing my favorite homemade bread recipes below too so you can further save money.


 Ingredients:

1 lb ground beef

3 small to medium size potatoes, diced

2 medium to large size carrots, diced

1 cup leeks

1 14oz diced tomato

2 tbsp tomato paste

2 cups broth or use Homemade Gut-Healing Chicken Stock

1 tbsp Worcester sauce

2 cups water

1/2 cup barley

2 tsp of Italian seasoning

salt and pepper to taste

Directions:

Brown your ground beef and drain if needed. Combine all your ingredients inside the crockpot.


Cook on low for 6-8 hrs or high for 4 hrs.
