Creamy and Buttery Gnocchi

 Here's a quick and delicious meal. This easy gnocchi recipe is frugal to make because the ingredients are so flexible. You can use heavy whipping cream or half & half or just milk to make the thick sauce. If you have a well-stocked pantry like I do, you will only have to buy a few ingredients.  only had to buy the gnocchi from the dollar store and the jar of pesto sauce from Aldi. 

 I decided to use the remaining spinach I have on hand and use a few bacon bits. If you do not have these two, you can totally choose your own toppings like green onions or parmesan cheese. 


Ingredients:

1 17oz Gnocchi

2 tbsp Pesto

3 tbsp butter

2 tbsp olive oil

1 tbsp flour

1/2 cup half and half (can use heavy whipping cream)

1 cup milk

Salt and pepper to taste

Spinach ( I had about 2 handfuls of fresh spinach)

Optional: 1/2 cup cooked bacon bits and 1/2 cup parmesan cheese

Other additions aside from bacon: green onions, turkey bacon, chopped deli ham

Directions:

Using 1 tbsp spoon of butter and 2 tbsp of olive oil, fry the gnocchi until golden brown. You can season it with salt and pepper. Set aside.


Melt the remaining butter and stir in the flour on the same pan. Make the roux by continually mixing the butter and the flour until it forms a thick paste.  Slowly add the milk while stirring the pan. Add the pesto sauce. And stir in the half and half. Continue stirring until the sauce thickens.



Add the fried gnocchi. Add this time, and you can season it with salt and pepper. You can serve as is or add cooked bacon bits and chopped fresh spinach. 



Full of flavor, delicious, and easy to make. What I love about this recipe is that you can tweak it to make it more affordable. If you do not have a heavy whopping cream at home, it can be substituted with half and half, or just use milk! I love that you can leave out the bacon bits and just add whatever toppings you have on hand.
