Here's an easy, frugal, and flavorful crockpot recipe for busy families. We all know that chicken is one of the most budget-friendly meats that you can buy. You can buy a whole chicken for less than $5 at Aldi. And speaking of a whole chicken, this recipe uses simple ingredients. I used my left-over chicken from my Instant Pot whole Chicken Recipe, the rest of the ingredients cost me less than $5 as some of the ingredients were already in my pantry.

Broth- I used the left-over broth from the Instant Pot Whole Chicken Recipe.
Onion, garlic, cumin, oregano, salt, pepper - On hand in my pantry stock.
Ingredients I bought from Aldi: 3 cans of cannellini beans ($1.50), cream cheese (.99 cents), cilantro (.35 cents), and a small can of green chilies (.75 cents).
This recipe was so easy to put together and so flavorful. The only thing that I will change next time is reducing the amount of chicken to the broth to only 2 cups. But it is totally up to you since I prefer a thick and chunkier soup. I served this chicken chili soup with a warm loaf of Cheddar and Jalapeno Bread.
Ingredients:
1 lb chicken (or use left-over chicken)
3 cups broth- I used homemade broth
half onion, chopped
2 teaspoon chopped garlic
3 (14 oz) cans of cannellini beans
1 small can of green chili or enchilada sauce
1 8oz cream cheese, softened
1 cup chopped cilantro
1 tsp cumin
1 tsp dried oregano
salt and pepper to taste
Optional: red pepper flakes
Directions:
Add all of the ingredients to your crockpot and cook on high for 4-5 hours or low for 8 hrs.
Serve with any bread or crackers that you prefer!
