Pao de Queijo (Cheese Bread)

 These awesome little cheese breads are so good, that you will not be able to stop at just one piece. These goodies are one of the many delicious Brazilian foods I look forward to indulging everytime I go to a Churrascaria.  These Pao de Queijo are very easy to make. They are crispy outside but very soft inside. Did I tell you they are gluten-free too? Just the best! They are very addicting!



Ingredients:

1 cup milk
1/2 cup water
1/2 cup vegetable oil
3 cups tapioca flour
1 tsp salt
1 cup grated cheddar cheese (you can also use Parmesan)
1 egg

Directions:

Preheat oven to 400 degrees and line your cookie sheet with a silicone liner or parchment paper. 
Boil milk, water, and oil together.



In a separate bowl, mix the tapioca flour, salt, egg, and cheese.



Pour the milk mixture over the tapioca mixture, and mix with a spoon until it becomes a smooth batter.
If the batter is too sticky to form a ball,  add a teaspoon or more of tapioca flour. You can also put some  tapioca flour on your hands for easy rolling.

Make balls with the batter. An inch in diameter or a tad bigger. I made mine, a little bigger than usual.



Bake for 20 minutes until they are brown.


Best served warm but you can always reheat them in the microwave for 10 seconds the next day!!


It is so good to munch on by itself or serve it with a warm bowl of stew or eat it with your favorite barbecue and side salad!
