Fall finally arrived! While I haven't felt the cold and crisp fall weather, I am so excited for this season to arrive. I love everything about Fall. The colors of the great outdoors, home decors, and the scents. I have already stocked on fall-scented candles. Pumpkin patches make me smile and the upcoming Fall events are something to look forward to.
Furthermore, I am also looking forward to the recipes that are attached to Fall! I have been on a pumpkin spice coffee kick lately and had the pleasure of enjoying apple cinnamon streusel bread. I equally love fall soups too. I am sharing a frugal yet delicious crock pot soup recipe that will surely win your family's appetite. This is a copycat recipe of Zuppa Toscana soup. Ingredients:
1 lb Italian sausage
1 medium onion, diced
4 large garlic cloves, minced
6 cups chicken stock
6-8 red potatoes, chopped
3/4 cup cream
2 1/2 cups Kale, chopped
salt and pepper to taste
optional: pepper flakes, basil
Directions:
Cook Italian sausage and drain fat. Combine all the ingredients inside your crockpot except for the kale and heavy cream. Cook low for 6-8 hrs or high for 4 hrs. During the last few minutes, add the chopped kale and cream. Add salt and pepper to your liking.
I have a whole bunch of kale in my fridge that needed to be used so I decided to just cut it all up and add it all to my soup. It still tastes great! But you can always decrease the amount of kale if you are not a big fan of these green leafy vegetables.
