A bowl of this garbanzo chili will get you hooked into meatless chili. It is very filling! It is also slow-cooked to boot. I don't know about you but I really love knowing that there is a warm dinner waiting for us after a very busy day. I also do batch cooking with beans. I would buy two or more pounds of beans, cook it in my handy dandy crockpot and freeze it. It is frugal and less sodium of course. I also made the switch into making my own mixes. Ingredients:
1 1/2 cup garbanzo beans ( can use low sodium can)
1 1/2 cup black beans ( can use low sodium can
4 cups fresh tomatoes, diced
1/4 cup fresh cilantro, chopped
1/4 cup onion
1 cup each of diced: green, red and yellow bell peppers
2-3 garlic cloves, minced
1 cup of water
1 16 oz can tomato sauce
1 4 oz green chilies
1 tbsp lemon juice
1 tsp dried oregano
1 tsp dried basil
1 tsp red pepper
2 tsp cumin
2 tsp paprika
1/8 tsp cinnamon
2 tbsp chili powder
Directions:
Mix all the herbs and spices together in a small bowl.
Chop all the vegetables. Put all your beans, vegetables, prepared spices and herbs, canned tomatoes, and canned chilies in your slow cooker. Stir and cover.
Cook on low for 5-6 hrs.
Serve with cornbread or french bread.
