Smoosh Cookies

These cookie so far is my favorite of all the sweet treats I've made. My husband loves peanut butter cookies..me and the kids..hands down, Chocolate Cookies. We can eat it for breakfast actually . We try not to..but we certainly can.

Here's a few of our favorite cookie recipes :



If ever you can't decide on which one to bake..well..my friends...this is the BEST cookie recipe for you.





Ingredients:

For the chocolate cookie dough

1 cup all purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
2 tbsp milk or almond milk
1 cup semi sweet or milk chocolate chips
1/4 cup unsalted butter , softened
1/4 cup granulated sugar
1/4 cup brown sugar
1 large egg
1 tsp vanilla

For the peanut butter cookie dough:

1 1/4 cup all purpose flour
1/4 tsp salt
1/2 tsp baking soda
1 cup semi sweet or milk chocolate chips
1/4 cup unsalted butter, softened
1/4 cup brown sugar
1/4 cup sugar
1 large eggs
3/4 cup crunchy peanut butter
1 tsp vanilla





Directions:

Prepare your peanut butter dough :
 In a separate mixing bowl , Combine flour , baking soda and salt.
 In another large bowl ,  Cream the butter and sugars together ( hand or stand mixer) until light and fluffy. Mix in peanut butter , egg and vanilla. Scrape down your bowl as needed.  Mix in your dry ingredients with your peanut butter mixture. Do not over mix your dough.


Fold in chocolate chips.


Prepare your Chocolate Cookie dough :
 In a separate mixing bowl , combine flour ,cocoa powder,  baking soda and salt.
 In another large bowl ,  Cream the butter and sugars together ( hand or stand mixer) until light and fluffy. Mix in egg , milk and vanilla. Scrape down your bowl as needed.  Mix in your dry ingredients onto your wet ingredients . Do not over mix your dough. Fold in your chocolate chips.


Wrap your dough ( individually ) using a cling plastic wrap. Chill both doughs for about 1-2 hrs. I chilled mine for about 2 hrs,


Pre heat oven to 350 degrees.
Prepare your cookie/baking sheet. Line it with parchment paper, Measure about 1-2 tbsp of peanut butter dough, roll into a ball. Do the same with the chocolate dough , spoon 1-2 tbsp of the dough and roll it into a ball.  Now , smoosh ( gently) those two dough balls together ( ha! smoosh cookies) forming one large ball. It will be sticky and messy, that is why chilling the dough is important..without chilling of the dough..it will be more stickier! Repeat the smooshing and the rolling for all the remaining dough.  I know..hard work huh? 
I promise you..it is all worth it  :)

Bake it for 11-12 minutes. To be on the safe side I did exactly 11 minutes , some oven varies on their temperature. Do not over bake, We want a fluffy , chunky cookies right?

You make think that your cookies are not fully bake , no worries ..just leave it on your cookie sheet to continue to "bake"  and it will get firm.


Press a few pieces of chocolate chips on top of the cookies while it's still hot.





All those dirty and messy smooshing and rolling is worth it..

    1. Hi Kalliste , Thank you for stopping by.. I do appreciate it a lot.. I did not had a problem with it separating..you just have to make sure that you smoosh it good ( both the doughs) together..gently to retain the shape but good so they stick together, Hope you had an amazing 4th of July!
