Tortellini and Sausage Soup

I know that it is is pretty much not the perfect weather to be serving soup. It was a triple-digit temperature here in the Inland Empire and yes, who wants to have soup. But..stay with me on this one because it is a quick, easy, budget-friendly dish to make. This recipe is so easy and it would only take you half an hour to cook it.




Ingredients:

1 package Turkey Kielbasa,  sliced

1 tbsp olive oil

1 medium yellow onion, chopped

1 garlic clove, minced

1 tbsp. tomato paste

1 28oz can low sodium diced tomatoes

2 cups baby spinach

4 cups low sodium chicken broth or better than bouillon (prepare according to directions /diluted with water)

1 tsp salt

1 tsp. pepper

1 package 9oz cheese tortellini.

Directions:

Heat oil in a large pot. Saute onions until translucent. Add garlic. Saute until fragrant. Stir in tomato paste and the sliced of turkey kielbasa. Cook for 5 minutes. Add the diced tomatoes,  broth and tortellini.



Season with salt and pepper. Bring to a boil. Reduce the heat and let it simmer gently for about 5 minutes. Add the spinach and cook for another 3 minutes.



All you need is 30 minutes to cook this delicious soup.
