Oven Roasted Whole Chicken with Rice and Broccoli

Cook the rice according to package instructions or to your preferred method. Cook the broccoli according to package instructions or roast in the oven. Save the bones for a homemade stock and leftover chicken for lunch sandwiches.

Use one chub of ground turkey instead of the ground beef.

Serve with homemade bread. Use the bones from the roasted chicken for homemade broth or stock. Here's a healthy homemade Chicken Stock Recipe

Use Turkey Kielbasa instead of the pineapple and apple sausage. For veggies, you can use broccoli and carrots

Use the canned tuna instead of crab meat. Serve with the cucumbers and carrots.

This recipe calls for zucchini. If your budget allows, add the zucchini, otherwise you can just use celery!

Alfredo Pasta and Broccoli

Use the alfredo pasta for an easy pasta recipe. Cook the pasta according to package instructions. You can add seasonings such as garlic powder, onion powder, salt and pepper for flavor boost. Cajun seasoning is also a good option. Serve with steamed broccoli.

Meal prep tips:

1. Make your breakfast burritos in advance. Use the eggs (scrambled), potatoes (roasted), and some seasonings. You can even add roasted bell peppers!

2. I would put the oven roasted chicken as my first meal so I can make broth after. That way it will be ready for the hearty ground turkey soup recipe. Shred the leftover chicken for sandwiches. You can make a chicken salad by mixing mayo, chicken meat, onion powder, chopped onions, and salt and pepper to taste.

3. Make the bread and pancakes in advance. Pinterest have a lot of amazing homemade pancake recipes.

4. If you are not big fan of scrambled eggs, boil the eggs for easy breakfast and snack option.

5. Precut your veggies for your snacks!

If you are trying to save money on groceries, meal planning with ALDI is one of the easiest ways to cut food costs while still serving hearty homemade meals.
