Easy Oven-Roasted Whole Chicken

 Chicken is one of the cheapest proteins that you can add to your list of frugal meals to make. Speaking of frugal meals, if you like to save more money make a list of your go-to cheap meals in a notebook. That way, when a paycheck needs to stretch into several days, you will have a collection of frugal meals that you can access. I usually write all of my frugal recipes/meals in a planner so I don't have to plan from scratch, it saves me so much time. 

 I love making oven-roasted chicken. It can definitely stretch a budget because you can make several meals from one whole chicken depending on your family size. You can serve the roasted chicken one night, shred the leftovers, and save the bones to make bone broth. Some meals that you can make are burritos, taquitos, alfredo pasta, chicken salad, and chicken soup.

Whole Chicken: $4.35

Basmati Rice: $3.79

Frozen Mixed Veggies: $1

Pantry Items Used:  olive oil, garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper.

Items used from my fridge: Green onions that needed to be used. You can also use onions and lemons.


Ingredients:

1 whole chicken

Seasonings: garlic powder, onion powder, paprika, salt, pepper, and Italian seasonings. Use whatever seasoning you have on hand.

Frozen mixed veggies, cook per package instructions)

Basmati Rice, cook per package instructions

2 tbsp olive oil

Directions:

Preheat oven to 425 degrees. Line your baking sheet or baking pan with aluminum foil. This is optional. You can also just grease the pan that you are going to use. 

Mix olive oil and all the seasoning in a small bowl. Pat your chicken dry, and apply the seasoning mixture to the chicken. Make sure that you don't forget the bottom part of the chicken and all the crevices.

If you have onions and lemons you can put it inside the cavity. I have a wilted green onions so I just used it! You can totally still enjoy this chicken without it. Bake the chicken for 1 hour or use a meat thermometer.  Bake until internal temp (thickest part) reaches 165 degrees.


Serve with rice and mixed veggies!
