Hearty Ground Turkey and Veggie Soup

Great for Meal Prep and Batch Cooking– I love making a big pot of soup because we can use the leftovers for the next day's lunch. It stores well, making it perfect for freezing. 




Ingredients:

• 1 lb ground turkey 
• 1 tbsp olive oil 
• 1 small onion, diced
• 2 carrots, peeled and sliced 
• 2 celery stalks, chopped 
• 3 cloves garlic, minced 
• 1 can (14.5 oz) diced tomatoes

• 2 to 3  potatoes, diced (I used russet potatoes)
• 1 zucchini, chopped 
• 1-2 tsp Italian seasoning
• ½ tsp paprika 
• Salt & pepper to taste

Optional for more nutrition boost:  1 cup fresh spinach or kale, white beans, drained and rinsed)

Directions:

In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Sauté for 3–4 minutes until softened. Stir in the garlic and cook for another 30 seconds. 

Add the ground turkey, breaking it up with a spoon. Cook until browned and no longer pink.

 Add the broth & vegetables: Pour in the diced tomatoes, broth, potatoes, zucchini, and seasonings. Stir to combine. 

 Bring the soup to a gentle boil, then reduce heat and let it simmer for about 20–25 minutes, until the vegetables are tender. 




If using, stir in the spinach or kale and white beans, letting them warm through for 5 minutes. 

Pair it with crusty bread for a heartier meal. Top with fresh parsley or a sprinkle of Parmesan cheese for extra flavor.  You can also serve it with a side salad for a balanced meal.



Meal Prep Tips:

You can make this a freezer meal by dumping all the ingredients in a freezer-safe Ziploc bag (gallon size). If you worry about the raw meat, you can brown it beforehand. Cook in a slow cooker on low for 6-8 hrs, on high for 4 hrs. You can also use a bag of frozen mixed vegetables for easy cooking.

 
Storage:

 • Refrigerate: Store leftovers in an airtight container for up to 4 days
 • Freeze: This soup freezes well! Let it cool completely before freezing in portions. Thaw overnight and reheat on the stove or in the microwave.
