Mini Turkey Meatloaf

 

Ingredients:

1 lb ground turkey

1 egg

1 cup old-fashioned oats

1 medium to large zucchini, shredded

1/2 cup red bell pepper, diced

2 tsp garlic powder

2 tsp onion powder

1 tsp paprika

1 tbsp Italian Seasoning

1 tsp salt

1 tsp pepper

Sauce topping: 1/4 cup Ketchup mixed with 1/4 cup Barbecue sauce.

* Makes 36 pieces

Directions:

In a medium to a large bowl, mix all the ingredients.

Feel free to use your hands so you can mix all the ingredients properly.


I use a mini silicone muffin pan. Spray all the silicone/muffin cavities with non-stick spray. Fill in each of the cups/cavities with approximately 1 tbsp of the seasoned turkey meat. Top with the sauce.

Bake at 375 degrees for 30 minutes. Let it cool before removing the meatloaf. 


Serve with rice and veggies!
