10 Hot Weather Meals to Make

 I love cooking; however, during summer, I would rather spend fewer hours in the kitchen. It makes our home more humid and hot, making it hard to cool down. We live in an old cabin in the mountains without AC. Even though it is still much cooler up here in the mountains during the summer, it can still get pretty warm inside our home. I would also rather spend much time enjoying summer activities with my family than being stuck in the kitchen

  Here are hot weather meals that are quick, light, and refreshing—ideal for when it’s too warm to spend much time over a stove or eat heavy food. These meals either require minimal cooking or none at all. Let me know if there are some no-cook meals that you always make!




 1. Mediterranean Chickpea Salad

 You will need: Canned chickpeas, cherry tomatoes, cucumber, red onion, parsley, feta, lemon juice, and olive oil. You can add salt and pepper to taste.

How to make: Toss in a bowl and store in the fridge. I love eating it cold.

 2. Cold Noodle Bowl 

 You will need: soba, rice noodles, or spaghetti. Shredded veggies such as carrot, cucumber, and bell pepper. chill. For the sauce: Soy sauce, sesame oil, lime juice, and optional grilled tofu or shrimp for toppings.

How to make: Cook the noodles ahead. Mix the ingredients and toss with the sauce. Add the optional topping.
 

 3. Caprese Salad with Bread

 Ingredients: Fresh mozzarella, tomatoes, basil, balsamic glaze, olive oil.

 How to make: Serve with crusty bread or toasted baguette slices.

 4. Tuna-Stuffed Avocados

 Ingredients: Tuna, greek yogurt or mayo, celery. lemon juice, avocados, salt, and pepper.

How to make: Mix canned tuna with Greek yogurt or mayo, celery, lemon juice, and stuff into avocado halves. Add salt and pepper to taste.

 5. Summer Rolls (Rice Paper Rolls)

 Ingredients: Thinly sliced veggies: carrots, cucumber lettuce, avocado. Optional: shrimp or tofu. Peanut sauce or Hoisin sauce

How to make: Wrap thinly sliced veggies, shrimp, or tofu in rice paper. Serve with peanut or hoisin dipping sauce. 

 6. Chicken Caesar Wrap

Ingredients: Flat bread wrap, rotisserie chicken, romaine lettuce, parmesan, and Caesar dressing. 

How to Make: Wrap all the ingredients. Dip in Caesar dressing. 

 7. Veggie Hummus Wrap

Ingredients: Hummus, cucumber, bell peppers, spinach, shredded carrot, and a dash of lemon juice in a tortilla. 

How to Make: Add all the ingredients to a wrap. You can use hummus as a dip too.

 8. Egg Salad Sandwich 

 Ingredients: Boiled eggs, mustard, yogurt/mayo, celery, and herbs. 

How to make: Chop the boiled and peeled eggs. Add the rest of the ingredients.  Keep chilled and serve on toast or lettuce cups. 

 9. Grilled Protein + Cold Side 

 Protein: Grill chicken, fish, or tofu outdoors or use a grill pan briefly indoors. 

 Serve with a cold quinoa salad, coleslaw, or cucumber-dill salad. 

 10. Gazpacho (Cold Soup) 

Ingredients: tomatoes, cucumber, bell pepper, garlic, vinegar, and olive oil

How to make: Blend all the ingredients. Chill and serve cold with bread.
