Sausage Rice Bowl

 Here's an affordable and delicious dinner meal idea! I used a pack of Aidells Pineapple and Bacon sausage. For my veggies, I roasted zucchini and broccoli but you can use whatever vegetable you prefer. To add some nutrient boost to my good 'ole white rice, I added a cup of quinoa and edamame to my rice (I cooked it all together).


Ingredients:

1 pack of Aidells Pineapple and Bacon sausage

Cooked rice

Zucchini and broccoli chopped

Olive oil

Seasonings: garlic powder, onion powder, paprika, salt, pepper- 1 tsp each

Directions:

Preheat your oven to 400 degrees. If you do not have cooked rice, prepare rice according to the package instructions. My ratio is always 1:1. Use an instant pot or stove stop. When cooking the rice on the stovetop, I cook it for 45 minutes. You can also add seasoning you like. I added quinoa, edamame, and a drizzle of olive oil.

Line your cookie sheet with parchment paper. Put all the chopped veggies on the cookie sheet and drizzle with olive oil. Sprinkle your seasonings on top of the veggies and mix it all together until the veggies are coated with oil and all the seasonings.


Bake the veggies for 25 minutes. Make sure you toss the veggies around the 10-minute mark. Once, it's done set it aside in a separate bowl and roast the sausage using the same cookie sheet for 20-25 minutes.



Arrange the bowl by first putting the rice followed by the sliced sausage and roasted veggies. You can use hot sauce or drizzle the top with teriyaki sauce. This simple and cheap meal idea will cost you under $10. It fed my family of four!
