Mexican Rice - A Bountiful Love

Mexican Rice

 This Mexican rice recipe is by far the easiest and most delicious I have tried. What I love about this recipe is that you have two options with the ingredients depending on your health options or what is inside your pantry. I like using my Dutch oven with this Mexican Rice recipe. The result is a bowl of delicious and fluffy rice.

Ingredients:

2 cups of rice

4 cups of water

2 tsp onion powder

2 tsp garlic powder

cooking oil (avocado oil or olive oil)

Seasoning Option 1: 1 can tomato sauce, 1 1/2 tsp cumin, 1 tsp chili powder, salt and pepper to taste.

Seasoning Option 2: 1/2 tbsp Chicken Bouillon and 1 tbsp Tomato Bouillon.

Directions: 

I used a Dutch oven casserole. Heat oil and brown the rice. Be careful not to burn the rice. Add the garlic powder and onion powder. Add 4 cups of water and the seasoning of your choice (option 1 or 2 from the ingredient list). 

Bring the rice to a boil and cover for 20 minutes. Turn the stove off and remove the Dutch oven from the stove. Let it sit for 5 minutes and fluff. Enjoy your rice!

Serve with your favorite Mexican Dishes. Great for Burritos too!
