Mexican Pizza - A Bountiful Love

Mexican Pizza

If you are a Taco Bell fan or an Alberto's Mexican Food fan, raise your hand!! It is just so hard to say NO to a delicious Mexican dish. We only eat out once in a while since we decided to make smarter choices with food.

This recipe is to die for! Frugal and so good! You may probably have all the ingredients at your pantry already. You can make a healthier version of Mexican pizza by replacing the meat with TVP (texturized vegetable protein), soy chorizo, or just beans. You can use vegan cheese as well!



Ingredients :

1/2 lb of ground turkey
2 minced garlic cloves
1/2 cup diced onion
1 tbsp of taco seasoning or use  HOMEMADE TACO SEASONING
1 can refried beans or use the Healthy Refried Beans recipe from Weelicious
1/2 cup salsa, jar, or homemade
2 cups Mexican blend shredded cheese or cheddar cheese
10 flour tortillas, Try this recipe: Homemade Flour Tortillas 

topping of your choice: I used black olives, green onions, and fresh tomato.
you can add some hot sauce too, I skipped this. ( because of our kiddos )

*** I made 5 Mexican pizzas.

Directions:

 Preheat your oven to 350 deg.  Prepare your onions and garlic.


In a skillet, place the ground turkey, onions, and garlic. Cook until meat is no longer pink. Drain excess fat.

Put the meat mixture back into the stove, medium heat. Add in the taco seasoning. I used homemade.


Mix thoroughly.


In a parchment-lined cookie sheet or tray, Place two tortillas side by side. Spread refried beans on top of each tortilla.


followed by the seasoned ground turkey.



Cover each of the tortillas with another layer of tortilla. Bake for 10 minutes


Cool slightly  Spread salsa on top of it.


Followed by cheese.


Then your choice of delicious toppings. We love chopped tomatoes, olives, and green onions.


Put the pizza back in the oven and bake for another 5-7 minutes or until the cheese melts.

Let it cool, and cut it into serving sizes.


It is so delicious, and I promised you that is yummier than that famous taco selling fast food place.

As for Alberto's, I am not going to attempt your rolled tacos and chimichanga plates, you will remain a guilty pleasure and a  " fridate" night craving.

  2. Since my husband has only two basic needs: burritos and pizza, I will be sure to try these! Thanks! I have a great homemade frijoles recipe on my website, but i like this one even better: 1 lb. dry pintos all night in the crock pot in 7 cups or so of chicken broth and lots of garlic. When tender, mash with 1/4 cup butter. Place in 9x9 casserole and reheat for 25 min or so. Smooth as butter.
