Einkorn Banana Bread

  Einkorn flour is one of the oldest cultivated grains, dating back to over 10,000 years. As an ancient wheat variety, einkorn (Triticum monococcum) has remained largely unchanged over the centuries, unlike modern wheat, which has been selectively bred for higher yields. Einkorn is known for its nutritional benefits, easier digestibility, and rich, nutty flavor. It is gaining popularity among health-conscious bakers and those with mild gluten sensitivities. 

  In addition, einkorn has higher levels of protein, vitamins, and minerals. If you decide you switch or add einkorn to your pantry staple, there will be some adjustments that you have to make when baking. Einkorn has lower gluten content and structure making it less elastic, less stretchy, and a bit more stickier. It absorbs liquid slowly so you might need to reduce the liquid in your recipe. You also might need to be gentle with kneading, minimal mixing helps prevent a dense final product. Another great tip is to let your dough rest time to help improve your baked good's texture. Baking at a lower temperature to prevent over-browning is also helpful since einkorn browns faster than wheat.

 Einkorn Flour Substitution:
 
 All-purpose flour - use a 1:1 ratio but adjust the liquid slightly. 
 Yeast Bread- reduce the hydration by 10-15% 
 Cookies and Cakes- Einkorn will work well but your crumb or result will be on the softer crumb.


Ingredients:

1 cup, shredded zucchini

1 cup sugar

1/4 cup olive oil

3/4 cup chocolate chips

13/4 cups Einkorn Flour like Jovial All-purpose einkorn flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

2 large eggs, room temperature


Directions:

Preheat oven to 350 degrees. Prepare a loaf pan using a nonstick spray or lining it with parchment paper.

Sift flour, baking powder, baking soda, cinnamon, and salt in a bowl.

In a separate bowl, beat the eggs, sugar, and oil. Stir in the zucchini.

Add the flour mixture to the wet ingredients (egg mixture). Stir until combined but do not overmix. Add the chocolate chips.

Bake for 45 to 50 minutes. Let it cool before cutting and serving.
