Black Bean and Butternut Chili


  Who doesn't love a warm bowl of chili waiting for you when you get home? This healthy and tasty black bean and butternut squash chili are just perfect for the Winter season. It's been raining here for almost a week (Thanks to El Nino) and it is way colder than last year. I know, So. Cal. residents are sissys when it comes to our tolerance to cold but I know one thing we can all agree on is how perfect it is to have a hot and delicious bowl of chili on a bitterly cold night.

   Here are an easy, frugal, and healthy crockpot black bean and butternut squash chili recipe for you. You can use a 5qt. slow cooker and this recipe make 10 servings.





Ingredients:

5 cups butternut squash, peeled and cubed
1 chopped, medium yellow onion
2 tbsp of olive oil
2 cloves, minced garlic
1 cup, chopped red bell pepper
2 15 oz, low sodium black beans, rinsed and drained. I used homemade black beans.
1 14oz can crushed tomatoes
2 tsp dried parsley flakes
1 1/2 tsp dried oregano
1 1/2 tsp cumin
1 tsp chili powder
salt and pepper to taste.

Directions:

If you are lazy like me, you can buy these peeled and cubed butternut squash at Trader Joe's. It is less than $2 a bag. 


In a large skillet, saute onion, red bell pepper, and garlic in olive oil. Until the onions are translucent and garlic is fragrant.


Put all the remaining ingredients into your slow cooker and mix in the sauteed onions.


Cover, cook on low for 4 hrs. or until the vegetables are tender.


Protein-rich and hearty chili!
