Salmon Cakes

  The hubby is not really a huge fan of fish. I can eat fish every day but I really do not like the "fried fish" smell that it can leave in your house. This very simple yet tasty and healthy salmon patty surprisingly doesn't smell that bad. The fishy smell did not linger.

  This recipe is a crowd-pleaser and kid-approved. Make these patties with mayo sriracha sauce.




Ingredients:

1 lb  fresh salmon or one 7.5 oz of canned salmon
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
1 egg
2 tbsp chopped parsley
1/2 cup to 1 cup breadcrumbs ( use homemade wholewheat breadcrumbs)
olive oil for frying
1 tsp creole seasoning
salt and pepper to taste

water and lemon ( if poaching)

Sauce:
1 tbsp Sriracha sauce
1/2 cup mayo


Directions:

If using fresh salmon, remove the skin and poach your salmon first.


Using a fork, flake your poached salmon. If using a canned salmon, remove any skin, drain and flake the salmon.


Add the spicy brown mustard.


If using homemade breadcrumbs, using a food processor blend about 4-6 pcs. of whole wheat bread.


Mix the vegetables, seasonings, crumbs and the salmon together.


Shape the salmon mixture into patties. Heat oil and fry the patties for about 6 minutes or until browned.


 For the mayo sriracha sauce, mix a tablespoon ( or more) of Sriracha Sauce to a 1/2 cup of mayo.


Whisk until well incorporated.


Serve the delicious salmon patties with the mayo sriracha sauce and a mixed green salad!


You can also serve it with tartar sauce.
