Chocolate and Oats Muffins

You can pretty much assume that I am a muffin kinda girl. I love making muffins that are easy and have simple ingredients that I can tweak to make them healthier. Some days I make my own muffins mixes and store them on Ziploc bags and just add the dry ingredients on my baking days. Other times, I make sure to make a double batch of muffins so I can serve one batch to my family immediately and store the rest in the fridge. Doubling up on baking days saves me so much time in the kitchen especially on school days.

   This muffin recipe is not just great for breakfast but as well as a snack. I pack it for my kid's school lunch as a recess snack or a treat. Try these easy and delicious muffin recipes: Nutella Oat Muffins or Caramel Apple Muffins and oohh the Layered Banana Muffins! I must warn you though, I did a mean Chocolate Zucchini Muffin that our youngest daughter ate! She ate it! That's a big deal because she refuses to eat anything green at the age of 3.



Ingredients:

1 1/2 cups old fashioned qats
1/2 cup unsalted butter -can use olive oil or coconut oil
2 2/3 cups whole wheat flour
1 cup Chocolate chips
2/3 cups sugar
2 eggs
1/2 tsp salt
4 tsp baking powder
1 1/2 cups milk -can use almond milk

Directions:

Preheat oven to 350 degrees. Grease your muffin tins or line with paper muffin cups.
Luckily, I already pre-made my mix. Otherwise, In a mixing bowl combine all the dry ingredients except for the chocolate chips. (flour, sugar, baking powder, and salt if using)


In a separate bowl, mix the eggs, milk, and oil.


Mix in the wet( milk egg and oil) mixture into your dry ingredients. Mix until well incorporated but DO NOT OVERMIX.

Fold in chocolate chips.


 Fill in your muffin tins with the batter.   Just for a beautiful effect, I like to put several pieces of chocolate chip on top of the batter. Bake for 18-20 minutes or until a toothpick comes out clean.


 Serve with milk or coffee. A great addition to your back to school lunches too!
