Parmesan Crusted Salmon with Sweet and Spicy Sauce and Roasted Asparagus

 Salmon is a good source of Omega 3 which is beneficial for brain health. It also helps to lower the levels of bad cholesterol and it very rich in Vit D.  But which is better? Farm or Wild raised salmon?
Most of the salmon that we buy are farm-raised that uses a process (aquaculture) to breed fish that we can consume (source). Wid-caught salmon is from an environment such as the ocean, lakes, and rivers. Aside from its environment, both salmon sources differ from what they eat. Farm-raised are fed with processed feed and the wild-caught eats organisms that are found in its environment. Healthline shared the nutritional differences between the two sources (read it HERE) and while the farm-raised salmon has higher levels of contaminants, the article mentioned that the levels are not found in harmful quantities.

Wild-caught salmon is the wisest choice to eat but it can be very expensive. However,  if we think about the benefits in the long run...I think the benefits will outweigh the cost. Truthfully, I don't always buy wild-caught salmon. I only do when it is on sale. My take is that you eat in moderation. We can also expand our source of Omega 3 to plants. Flax seeds, Brussel sprouts, and chia seeds are also a good source of omega 3.

Aside from Salmon with Teriyaki Sauce (my go-to recipe), this recipe is simply flavorful! The kick from the sriracha sauce is subtle but of course, you can always add more sriracha.




Ingredients:

1 lb of Salmon Fillet
1/2 lemon
1-2 cups Breadcrumbs or Make your own Homemade Breadcrumbs
2 tsp Seasoned Salt
1/4 cup Parmesan Cheese
1 tsp garlic powder
2 tsp pepper

 For the Roasted Asparagus:
 A bunch of Asparagus
2-3 tsp of Kosher Salt
Pepper
Olive oil

For the Sweet and Spicy Sauce:
1/3 cup Fat-Free Sour Cream ( Can use mayo)
2 tbsp Condensed milk
3 tbsp Sriracha Sauce ( or more if you really want it spicy)

Directions:

Preheat your oven to 350 degrees
Start making your breadcrumbs. You can always use store-bought breadcrumbs.

  

 Marinate your salmon fillets with lemon, sprinkle with salt and pepper. Put it in the fridge for about 20 minutes.


 Mix in the Parmesan cheese, seasoned salt, pepper, garlic powder together with your breadcrumbs.


In a lightly greased baking dish, place your marinated salmon. Top with the seasoned crumbs.
 Bake it at 350 ( preheated) for about 25-30 minutes.


 Meanwhile, make the sauce by mixing in your sour cream or mayo, sriracha sauce, and condensed milk. Whip it until thoroughly combined. Set aside.



As for the Roasted Asparagus,

 Preheat oven to 425 F

Trim the ends of your asparagus, wash, and pat dry. In a cookie or baking sheet..spread the asparagus and drizzle with olive oil. Sprinkle with Kosher Salt and black pepper.  Bake for about 10 minutes.


 The asparagus is perfectly roasted, not wilted and just the right amount of crunch.  I was actually surprised that our girls loved it.


Drizzle the sweet and spicy sauce on top or not..maybe as a dipping sauce.
