Not a fan of meatless meals? I know, Spinach Ball does not sound appetizing at all. Give this small round tasty meatless balls a chance. They are really good, very easy to make, and budget-friendly to boot.

Ingredients:
2 (10 oz) packages frozen spinach
5-6 eggs, beaten
1/2 cup butter, melted
1/2 cup onions, finely chopped or 2 tbsp onion powder
2 1/4 cups chicken stuffing or stuffing with herbs
1/2 cup Parmesan cheese, grated
1 tsp garlic powder
1 tsp seasoned salt
1/4 tsp salt ( optional)
1/2 tsp pepper
optional: ( to serve with the spinach balls)
package of orzo
Parmesan cheese
dried parsley or dried basil
olive oil ( but can use butter too!)
Directions:
Preheat oven to 350 degrees. Thaw the spinach and make sure that it is well-drained. Mix all the seasonings in a small bowl.
Beat all the eggs in a separate medium-size bowl.
In a separate big bowl combine the thawed and well-drained spinach, mixed seasonings, eggs, Parmesan cheese, and the stuffing.
Form into 1 inch balls. Bake for 20 minutes.
If you prefer to bake and freeze for later, remove it from the freezer 30 minutes prior to reheating, reheat on the preheated oven for 10 minutes.
If you prefer to just prepare it and bake it for later, remove it also 30 minutes prior to baking and bake as directed above.
Serve it on top of simple orzo pasta. Recipe below.
For the simple orzo pasta recipe to serve with the spinach balls, prepare Orzo according to package instruction. Drizzle with olive oil, mix in about 1/4 cup of Parmesan cheese and top with a few sprinkles of dried basil.
or you can just actually serve it as an appetizer, it is really really good with ranch dip.
