12 Days of Christmas yummies and treats : Oatmeal Cookies with White Chocolate & Butterscotch Chips

 Day 3 my friends..day 3 of Christmas yummies and treats. This recipe originally calls for the use of 1 cup of butter, instead, I used coconut oil. I have used coconut oil as a substitute in baking before and I must say ..it does not compromise the quality of your recipe. These delicious oatmeal cookies, also call for 1 cup of granulated sugar and 1 cup of firmly packed brown sugar.  I decreased the sugars into 1 cup ( 1/2 cup of white and 1/2 cup of brown). The butterscotch and white chocolate chips add extra sweetness already.



Ingredients:

1 cup Coconut oil ( or butter )
1/2 cup granulated sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla
2 cups all-purpose flour
1 1/2 tsp cinnamon
1 tsp baking soda
1 tsp salt
3 cups old fashioned style oatmeal ( uncooked)


Directions:


Preheat oven to 375

I have prepared the dry ingredients ( flour, cinnamon, baking soda, and salt) a few days ago.




Combine the flour, baking soda, cinnamon, and salt in a bowl. Set aside

Cream coconut oil and sugars until smooth. Beat in eggs and vanilla.


I don't know what was I thinking. I was using a small bowl, so I had to do a switcheroo into a bigger mixing bowl.


Beat the flour mixture thoroughly into the creamed mixture.
Scoop or drop a rounded teaspoonful of the dough onto a lined baking sheet.
bake 10-12 minutes.
