Homemade Bean and Bacon Soup - A Bountiful Love

Homemade Bean and Bacon Soup

Ti's the season for soups and stews. A bowl of comforting warm soup , is not just very filling but also budget friendly and much healthier than store bought canned soups. You can easily adjust all the ingredients , add or bypass some , eliminate or abate sodium ..just making it your "own" . I used to love the canned bean and bacon soup , until we made this.  I don't think you will ever come back to canned bean and bacon soup again. Ever.

6 strips of bacon , crushed.
1 large c carrots
2 stalks celery
4 chopped garlic cloves
1 medium onion
3 cups of Northern beans ( cheaper and healthier if homemade) or 2 15  oz cans
2 tbsp chopped parsely
Salt and pepper to taste

Chop all the celery , carrots, onion and garlic. Cook the bacon until crisp , transfer to paper towel lined plate. Reserved about 1-2 tbsp of the bacon drippings.

Bacon ..makes everything good doesn't it?

In a large saucepan , using the bacon drippings. saute the carrots for about 4-5 minutes. Add the celery , onion and lastly the garlic. Add the bacon , then the beans with 2 cups pf water. bring to a boil , cover and simmer for 10 minutes on low heat.

Mashed the beans partially to thicken the soup. Sit in parsely. Add salt and pepper to taste.

that easy right?

Serve with crackers or french bread.
