How to Make Kefir Whey

   If you are new here, I would love for you to follow me on Instagram or Pinterest where I constantly share on both outlets. Speaking of Instagram, one of my goals this year is to start sharing recipes on my IG account. I think it will be great for my followers (my not so many followers haha) to have access to recipes without the long introduction a blog post entails. So far, I have only shared my Instant Pot Yogurt Recipe that my family absolutely enjoys. If you haven't tried IP yogurt yet, I think you should give it a try. It is very refreshing, delicious, creamy, and healthy. It is a 24-hour ferment yogurt that is pack-full of probiotics.

  Milk Kefir drink is also full of probiotics. A gut-friendly and super healthy drink. If want to know how to make your own milk kefir and learn its health benefits, check this post: How to Make Milk Kefir. My whole family regularly drinks Kefir. We love kefir shakes, kefir dressing, kefir popsicles, and I have used them to replace sour cream on recipes. Even though it is good on its own, adding honey (preferably raw honey) enhances the drink more! During wintertime or when it is "sick season" at school, we make sure that we have kefir milk 3 to 4 times a week to strengthen our immune system.

 When you make your own homemade yogurt or milk kefir, you will notice a light yellowish liquid separating from the yogurt and kefir. When I don't strain my yogurt (straining alters the consistency of the yogurt), the whey goes on top of my jar. Let's first talk about yogurt whey. There are two types of whey:

Acid whey from yogurt, sour cream, and ricotta-like cheeses.

Sweet whey from hard cheeses like cheddar and Swiss. This is the stuff that they use for whey protein powders.


How about the whey from milk kefir?

Whey from milk kefir is produced when the milk kefir over cultures. When I leave my milk kefir in the fridge for several days, the whey also separates from the milk culture.

 

Why is it good for you?

The raw liquid form of whey contains a substantial amount of amino acids. It benefits muscle health, helps burn fat, maintains good levels of blood sugar, and it strengthens the immune system. Furthermore, it promotes the production of Glutathione, an antioxidant found in everybody of the cells.


HOW TO MAKE KEFIR WHEY:

You will need:

Colander

Bowl

Coffee filter, tight-weave cloth, or cotton bag 

Process:

Set your colander in a bowl; lay a coffee filter or tight-weave clothing in the colander. 

Pour the milk kefir into the cloth. Gather up the edges and hang above a bowl or jar to drain for 2-24 hours. The longer you drain the milk kefir the more whey it will produce. and your kefir will become thicker. 

Uses for thickened kefir: a substitute for yogurt, spreadable cheese, or cream cheese in recipes.

How to use the kefir whey: as a starter culture for your fermented foods and for soaking beans,. Add the whey to your shakes, soups, and stews.
