Who doesn't enjoy a taco or two, but without meat in it? It might be scary for some, the idea of not consuming meat. After all, it's a taco! I had mentioned before that when we can, we do a meatless meal once a week. Baby steps to eating healthy are way better than not taking steps at all. We do the best we can on substituting some ingredients for a healthier one, making most of the spices or ingredients homemade, and revising a recipe with lesser sugar.
You can make this meal a vegan treat by substituting the cheese for vegan cheese. There is no need to panic over not having meat in it. These lentil tacos are pack-full of protein, satisfying, and most importantly delicious.
Ingredients:
1 cup washed lentils
2 cups vegetable broth (Homemade or store-bought)
1 14 oz can diced tomatoes with green chilies
2 tbsp Homemade Taco Seasoning
1 tsp minced garlic
Taco Shells
Toppings of your choice: guacamole, lettuce, tomato, shredded cheese.
Directions:
Add all the ingredients to the crockpot. Give it a stir. Cook high for 4-6 hrs. Don't worry if it looks soupy at first..the lentils will absorb it.
This is why crockpot liners are always nice to have.
Fill in the taco shells with the lentils and top it with your favorite fillings/toppings.
