Ingredients:
12-15 crushed graham crackers
1 8 oz cream cheese ( if you want it thicker, add 1 more 8 oz package of cream cheese)
1/2 can of condensed milk ( if making it thicker, use the whole can)
Strawberry Filling ( recipe below)
Frozen or fresh blueberries
Directions:
Using a Ziploc bag, crush your graham crackers. Crush and smash it like you mean it :)
In a medium-size bowl, Using an electric mixer beat your cream cheese and condensed milk until fluffy.
Put the cream cheese mixture in your fridge for about 20 -30 minutes.
Spoon your graham cracker crumbs onto the small cocktail glass or shot glass. Whatever you want to use. I've used mason jars before, and they are gorgeous!
Using a Ziploc bag (cut the corners but not so big) or a pastry/icing bag, pipe the cream cheese filling on top of the crumbs.
Top the cream cheese filling with the ( cooled) HOMEMADE STRAWBERRY FILLING ( hang in there..recipe is provided below)
Top with fresh or frozen blueberries.
Now tell me that's not ridiculously easy.
HOMEMADE STRAWBERRY FILLING
Ingredients:
1 cup hulled strawberries, fresh or frozen
3/4 cups sugar
2 tbsp cornstarch
Directions:
Using a small heavy saucepan, bring all ingredients to a boil. Stir it constantly..while slightly crushing the strawberries. Boil for about 2 minutes, it will be thick and chunky.
Let it cool completely.

Our friends recently visited us and I had little time to prepare a dessert. Luckily I have all the ingredients to make this yummy shooter but did a shortcut version. Instead of using a homemade strawberry filling, I used a canned cherry pie filling. It was awesome! Also, Instead of using 1 8 oz of cream cheese.. I used 2 (8 oz each) cream cheese and use the whole can of condensed/ sweetened milk.

DeleteThe cups are from dollar tree! ( 5 pack for just a dollar) . You can find them at the party supply aisle. They are plastic though..but holds the shooters really well. Thank you Pat and hope you had an amazing 4th of July.

ReplyDeleteHi Jennifer, for the cheesecake with strawberry filling ( original recipe on top using 1 8oz cream cheese) I was able to make 6 of the small cocktail glass from the dollar store. For the revised one with Cherry filling ( updated at the bottom) I was able to make 4 mason jars ( almost full) and 5 of the small cocktail glass. It really depends on how will you " assemble" it.
