Southwestern Egg Rolls

    Hubby absolutely LOVES this recipe. It is one of those recipes that we don't get leftovers. Ever. It is very easy to make and the ingredients are not expensive. This egg roll recipe is tasty, full of flavor, and budget-friendly. You can prepare this recipe the night before as well, all you have to do is to pre-cooked the chicken. The following day make your rolls and pop them in the oven.

 Serve the rolls with Cilantro Cream Sauce (recipe provided too). This cream sauce can not be only used for this egg roll recipe but it is also a perfect pair with chips and crackers.







Ingredients :

2 tbsp of olive oil and 1 tsp extra for brushing the rolls.
1 lb of diced skinless chicken breast
1/2 cup chopped onion
1 cup of frozen corn
1- 1 1/2 cup of Black Beans ( Homemade  or 1 14.5 can rinse and drained
3 cups fresh spinach or a pack of frozen spinach
1 tbsp cumin
1 tbsp chili powder
2 cups shredded jack cheese
salt and pepper to taste
10 taco size flour tortilla or make them. See Homemade Tortilla Recipe
jalapeno (optional)


Directions:


Preheat oven to 350. In a large skillet, heat the olive oil.  Saute the chicken, season with salt & pepper to taste.


Add the diced onions, until chicken is well cooked.


Add cumin and chili powder.
Mix thoroughly.


Add the beans and corn.


the spinach... cook until it is wilted.


Remove from heat and stir in the shredded cheese. Mix thoroughly until cheese is melted and well incorporated.



Spoon the filling into the flour tortillas and roll it burrito style.

Brush each side with olive oil. Bake in a baking glass dish for about 20-25 minutes. Flip the rolls in about 10 minutes into baking. It should be crispy when done.









For the Cilantro Cream Sauce... Just puree until smooth.
