Teriyaki Turkey Wraps

 You know those days when you do wake up early just so you can get ahead of things and by the end of the day..you still haven't accomplished all of your to do's. There is just not enough time in a day. There are manageable days and there are crazy hectic days. When you also have young ones at home..you know how time can slip through your hands. They come first, after all, they will not be that small forever.

  So if you have one of those crazy hectic days, but dread the thought of fast food...this recipe is easy, fast, filling, and delicious. Buying ground turkey and ground beef in bulk and pre-cooking the meats will save you time.  I just brown the ground meats, let it cool, and put them in a freezer Ziploc bags in portions.



Ingredients:

For the Homemade Teriyaki Sauce 

1 tbsp cornstarch
1 tbsp cold water
1/2 cup white sugar
1/2 cup soy sauce
1/4 cup cider vinegar
1 clove garlic, minced
1/2 tsp ground ginger
1/2 tsp ground black pepper

For the Turkey Wraps

1 lb ground turkey
1/2 cup water chestnuts
1/2 cup chopped celery
1/4-1/2 cup shredded carrots
2 cloves garlic
lettuce - for the wrap ( you can also use whole wheat tortilla wraps)
1 tbsp sesame oil
1 tbsp canola or vegetable oil
chopped peanuts ( optional)

Directions:

In a small saucepan over low heat, combine all the ingredients for the teriyaki sauce. Let it simmer, stirring frequently until sauce thickens and bubbles. You will only need a few of these may be about 1/4 cup..keep the leftovers in the fridge for Baked Chicken Teriyaki next time.


Prepare all the veggies you need for the wrap.


Brown your ground turkey, until it is no longer pink. Drain.

 Heat sesame oil and vegetable oil in a pan. Saute your onion. Add in celery, garlic, and carrots. Saute for about 2 minutes. Mix in your browned ground turkey, and about 1/4 cup of your teriyaki sauce. Let all the flavors blend in. Slightly let it cool.


Serve it with lettuce or a whole wheat tortilla wrap.


Drizzle with a tablespoon of teriyaki sauce on top and some chopped peanuts.
