Turkey Chili - Clean Eating and Low Carb


   Hubby and I started our journey of losing weight a few months ago. I do plan on sharing our journey soon and I can't wait to help and motivate people on taking charge of their health.  It doesn't matter how or when, what matters is deciding to change the habits and to just START. 


    We did a round of Insanity workout by Beachbody and what I love about the workout is the elite nutrition plan that came with it. I don't know about you but scouring the web for low-calorie meals is time-consuming. One of the meals in that cookbook is Turkey Chili. You can use homemade or store-bought or Veggie Chili. If you know me, I will make it homemade ( granting it's easy--and it is!) to save money. I was on a mission to lose weight and be healthy BUT doing it on a budget.  Here's a very easy, clean eating recipe for you. Ingredients:

1 lb, lean ground turkey
2 cans (14.5oz) Kidney Beans, or use Homemade Beans
2 tbsp, diced garlic
2 tbsp. olive oil
1 medium size, chopped red onion
1 large, chopped green bell pepper
4 chopped, Roma tomatoes ( 3 cups)
4 tbsp cumin
1 tbsp. chili powder
2 cups, homemade vegetable stock
1 (6oz) tomato paste
1 (15oz) no sugar added tomato sauce

Directions:


Using a large pot,  heat olive oil and saute the red onions, bell pepper, and garlic. Cook until onions are translucent.



Stir in ground turkey. When the meat is no longer pink, stir in cumin and chili powder. Mix.


Add the broth, tomatoes, tomato paste, and kidney beans.


Turn heat to low and simmer for 5 minutes, add the tomato sauce. Simmer for an additional 10 minutes.


A very simple, tasty, and healthy meal.



I usually make a big batch of this and separate them into small containers. It keeps really well in the fridge too. When you have a craving for a wholesome clean eating dish, it is conveniently waiting for you in your fridge.


If you don't mind a little heat, drizzle some Tapatio hot sauce on it!
