Southwestern Egg Rolls

Hubby absolutely LOVES this recipe. It is one of those recipe that we don't get left overs. Ever. It is very easy to make and the ingredients are not expensive. It is really good! Sometimes I make them the night before when I know the next day will be a busy one, then just pop it in the oven the next day. Serve them with Cilantro Cream Sauce ( recipe provided too)..as I can't imagine eating this delicious roll without this sauce of yumminess.

2 tbsp of olive oil and 1 tsp extra for brushing the rolls.
1 lb of diced skinless chicken breast

Add the beans and corn.

the spinach... cook until it is wilted.
