If you are like me, I am always looking into adding fiber into our diet. Adding finely chopped veggies into meatballs, patties, or meatloaf is one of the best ways to add fiber to your meals. I also love cooking stir fry and soup so I can add beans and nutrient-dense veggies. Aside from making Sauerkraut, we also enjoy egg rolls in a bowl when I have a bunch of shredded cabbage that I need to use.
This Cabbage Fried Rice is very similar to a egg roll in a bowl recipe. The only difference is that you add the cabbage and other veggies that you need to use on your favorite fried rice recipe! I have some rice cauliflower leftovers that I need to use so making this cabbage recipe is a perfect way to use it up. You can be creative by adding cooked diced meat such as chicken or cooked ground turkey and egg for protein.
Ingredients:
- Cooked rice
- Shredded cabbage
- Carrots
- peas
- chopped onion and diced garlic
- Coconut aminos
- salt and pepper to taste
- Extra Virgin Olive OIl
- Optional: sesame oil, diced meats, other veggies
Directions:
Sauté onion until translucent. Add in the garlic.
Add the shredded carrots sauté for a few minutes then add the peas.
At this point, you can add whatever extra veggies you need to use. I used rice cauliflower rice.
Add your shredded cabbage, cook for a few minutes then add the cooked rice. Season with aminos or soy sauce. Salt and pepper to taste.
This Cabbage Fried Rice is affordable and nutritious too!
