Easy Greek Rice

  There’s nothing quite like the comforting flavors of Greek cuisine, and this easy Greek rice recipe is a perfect way to bring a taste of the Mediterranean to your table. Light, fluffy, and infused with aromatic herbs, garlic, and lemon, this dish pairs beautifully with grilled meats, seafood, or roasted vegetables. I was trying to use up what's in my fridge so I decided to add onions in it. But you can actually skip it. Pairing this tasty and flavorful rice with any dish is easy. I love pairing it with any grilled meats, fish, and meatballs!

Keep reading for step-by-step instructions on how to make this delicious Greek-inspired side dish! 



 Ingredients:

1 cup long-grain rice

2 tbsp olive oil or avocado oil

4 cloves garlic, minced

1 1/2 cups chicken broth or use Homemade Chicken Stock

1/4 cup lemon juice

1 bay leaf

1 tsp powdered/ground turmeric

1/2 tsp kosher salt

1 tbsp fresh herbs like parsley

Optional: 1/2 cup diced onion

Directions:

Heat olive oil in a medium-sized pot and saute the onions (if using). Cook until translucent then add the garlic. Saute until the garlic is fragrant. Add the rice and saute for about 1-2 minutes.

Add the broth, lemon juice, turmeric, salt, and bay leaf. Bring to boil then cover. Reduce heat to low and cook for 20-25 minutes. Remove the lid and remove the bay leaf. 

 Fluff the rice with a fork and add herbs like parsley.
