I had been trying to be frugal and at the same time make things homemade so it is healthier. My friend blessed us with a box of tomatoes, so I used them to make homemade freezer-friendly oven-roasted tomatoes and homemade pasta. I have yet to dabble into canning but freezing it worked perfectly for us. You can use these easy homemade oven-roasted tomatoes with your favorite pasta recipes or any meat recipes that require a can of diced tomatoes.
Ingredients:
Tomatoes
garlic
onions
salt and pepper
olive oil
Herbs such as Italian seasoning, basil, or thyme.
Directions:
Preheat your oven to 375. Wash and dice your tomatoes. Pat it dry. Line a cookie sheet with a parchment paper. Add the diced tomatoes to the cookie sheet. Add the rest of the ingredients and toss to combine.
Roast for 20 to 25 minutes. Let it cool before transferring it to your container or ziplock bag. I used a quart-size freezer bag and labeled it. You can also add the date if you do not plan on using it within a month. Just for taste and freshness, I would suggest using it within 2 months.
