Here's a quick and delicious recipe. What I like about this recipe is that you can pretty much substitute the ingredients for a healthier one. You can use any flour that suits your dietary needs such as whole wheat, einkorn, or all-purpose gluten-free. You can use old-fashioned oats or quick oats or just omit them. You can use cinnamon apple sauce or the unsweetened sauce and use regular milk or non-dairy milk substitute.
As for the sugar, I have tried using just honey and it still turned out great! But there are tons of sugar substitutes that you can use like monk fruit sweetener or coconut sugar. The same goes with the chocolate chip, you can omit them or use the Enjoy Life Chocolate Chips. I added flax meal in this recipe but you can add flax seeds or chia as well. This muffin recipe is perfect for breakfast and a great school lunch companion too!

Ingredients:
1 1/2 cups all-purpose flour
1 cup old fashioned oats
1 tsp baking powder
1/2 tsp cinnamon
1 cup unsweetened applesauce
1/2 cup almond milk (or any milk you prefer)
1/2 cup packed brown sugar
1/4 cup coconut oil, melted (can replace with canola or vegetable oil)
1 large egg
2 tbsp flax meal (optional)
1 cup semi-sweet chocolate chips
Directions:
Preheat oven to 400 degrees. Line your muffin tin with paper liners. I used a silicone muffin pan so I just sprayed it with non-stick baking spray.
Mix the flour, oats, baking powder, baking soda, and cinnamon in a bowl. In a separate bowl, mix the applesauce, milk, sugar, oil, flax meal, and egg. Combine the dry ingredients with the wet ingredients, stir until moistened. Do not overmix.
Fold in chocolate chips into the batter. Divide the batter evenly into the muffin pan and bake for 18-20 minutes.
