Cauliflower Couscous

 Here's a super easy and healthy recipe if you are trying to swap rice or carbs in your diet. I love this recipe because it is quick, economical, and an excellent way to add nutrients to my family's diet. I originally got this recipe from the Sirtfood Diet book. Yes, I did that diet! I loved it and did lost weight but it was hard to keep the routine. I think that it did not work for my family dynamic. However, if I probably stick to it, in the long run, I will see greater results. And speaking of results,, maybe in the future, I can share more Sirtfood recipes that I tried and loved by my whole family, as well as share the journey. Just like any healthy eating diet or journey, it will only work if you will stay consistent and not think of it as a "diet" but more of a lifestyle change.

  I am sharing this recipe because I still believe in all the health benefits of the recipes shared in the book. Ingredients:

1 head of Cauliflower, processed or pulsed on a food processor. You can also use plain riced cauliflower.

1 tsp EVOO (extra virgin olive oil)

garlic cloves, finely chopped( I will just leave the amount to you. Evidently, no one uses only 2 garlic cloves).

1/2 cup red onion, finely chopped

1 Thai chili, chopped (skip if serving to little ones)

1 1/2 to 2 teaspoons of ginger, finely chopped. (I have used ginger powder too-1 teaspoon).

2 teaspoon, turmeric powder

1/2 cup Sun-Dried tomatoes, finely chopped

2 tbsp fresh parsley

Directions:

Saute the garlic, red onion, chili, and ginger in  EVOO until soft but not browned. Add the turmeric and cauliflower and cook for a minute. Remove from heat and add the sun-dried tomatoes and parsley.


This cauliflower couscous is pack-full with flavor and nutrients. Every ingredient has its own benefit and brings a depth of flavor into the cauliflower. I served this cauliflower couscous with Chicken Escarole (recipe coming soon!). In the book, the recipe is Turkey Escarole with sage, capers, and parsley. I happened to only have chicken breast but it worked fine!
