A few years ago, we started having meatless meals. We still do it and I don't think we will be stopping anytime soon. Meatless recipes are budget-friendly! Meatless recipes have the notion of being tasteless and that is totally not the case! Spices and herbs are your friends when it comes to meatless meals. Fresh or dried herbs are both great and if you are up for it..make your own spice blends.
Can you really be satisfied with a meatless recipe? Absolutely! These quinoa bites are little goodness in every bite. This recipe is versatile, serve it as a meal or a snack. Did I mention that it is a healthy alternative for pizza? Yes! Those days that you crave for a pizza..make this. It will not disappoint.
Ingredients:
1 cup uncooked quinoa
1 cup shredded mozzarella cheese
1 cup chopped yellow onions ( small chopped)
2 eggs
2 tsp garlic powder
1/2 to 1 cup, halved cherry tomatoes
1/2 cup dried basil
1/2 tsp salt
1 tsp paprika
1 tsp dried oregano
1 cup, homemade pizza sauce, see recipe HERE.
Directions:
Preheat oven to 350 degrees
Cook the quinoa according to package instructions. Cook until quinoa is tender.
Mix all the ingredients together.
Distribute mixture into a greased mini muffin tin, I used a tablespoon. Press each cup down. It will be a little messy, some quinoa will stick to your hands. Bake the quinoa bites for 20 minutes. You can check at 15-minute mark. Let it cool.
Each serving is full of flavor and healthy to boot! It is great for after school snacks or anytime at work that you need a quick bite. I made a huge batch of and kept it in an airtight container. It was still tasty after 3 days! Serve with pizza sauce and I promise you...this is way healthier and hip friendly than your regular pizza.
I might be a little biased with pizza sauce. I love homemade pizza sauce! First, it is very easy to make. Second, it is frugal, and frugal is my thing. Third, it is more flavorful.
I also made the 21 Day Fix version of this. I used the yellow container to measure my quinoa, a green container for the tomatoes, red for the eggs and I skipped the salt, used the 21 Day Fix All-purpose seasoning.
