Some parents may cringe with the thought of feeding their kids a can of spaghetti-o's. I do serve my kids' spaghetti O's. Not very often, but it is a lifesaver for those times when I am not feeling well or the seldom "momma, can we have spaghetti O's". The recipe below is the homemade and healthier version of the spaghetti-o's. It only has a few ingredients, still frugal, and easy to make.

Ingredients:
2 tbsp Olive oil
1 cup EACH OF chopped: celery, onion, and carrots.
4 cups vegetable broth (Homemade is good to use)
15 oz can tomato puree
2 cups ditalini or macaroni salad pasta
1/2 cup grated Parmesan cheese or use Pepita Parmesan (Healthier version too!)
salt and pepper to taste.
Directions:
- In a large pot, cook veggies in olive oil until tender.
- Add broth and tomato puree, bring to a rolling boil,
- Add the pasta and cook to Al dente;
- Season with salt and pepper.
- Serve with sprinkle Parmesan cheese.
Easy right?
