Fruit and Veggie Popsicles

   It's that time of the year for cold treats! We do enjoy our quick trips at our local yogurt place. Lucy and Lily enjoy choosing toppings! ( mostly M & M 's anyway ). We love our ice cream and popsicles. All parents would do everything for their children to eat healthy or incorporate healthy food with their meals. Here's an easy way to deceive..I mean incorporate spinach on a popsicle.

I promise you they do not taste " spinachy " -- yeah ..I just made that word. I know you get me. 



Ingredients:

1 6 oz tub strawberry yogurt
1 1/2 cup fresh or frozen strawberries ( I used frozen)
1 6oz tub key lime yogurt
1 cup fresh ( thoroughly washed) spinach leaves
1/4 cup milk ( can use almond, soy or lower fat milk)


Directions:

Using a blender , place 1 tub of the strawberry yogurt strawberries and milk,  and blend until smooth .


Goodness.


Spoon the mixture onto small cups or use a popsicle mold. I used a Dixie cup and good old popsicle sticks.


Cover the cups with foil and insert the sticks . Freeze it for about 2 hrs.


Now, blend the key lime pie and the spinach leaves. You can add a little  milk too.


When the first layer is frozen , remove foil and pour the mixture onto each cups. Freeze about 2 hrs or until they are frozen


If you prefer to add more layers or do the layering alternately.. that's awesome too! Just make sure to freeze it completely in between layers so that the colors do not mix into each other.




They are just too cute and most importantly  it taste really good. The girls didn't even know the green part have spinach on it.  Deceptively delicious!
