Fruit and Veggie Popsicles

   It's that time of the year for cold treats! We do enjoy our quick trips to our local yogurt place. My girls enjoy choosing different toppings and I  love it when it becomes a sweet mommy-daughter date. We also love our ice cream and popsicles. This recipe below is deceptively good.

  This popsicle uses spinach. I promise you that they will not be able to taste the spinach. We have made several popsicle recipes and have a compilation of my favorite recipes from other bloggers as well, you can check it out HERE.




Ingredients:

1 6 oz tub strawberry yogurt
1 1/2 cup fresh or frozen strawberries ( I used frozen)
1 6oz tub key lime yogurt
1 cup fresh ( thoroughly washed) spinach leaves
1/4 cup milk ( can use almond, soy or lower fat milk)


Directions:

Using a blender, place 1 tub of the strawberry yogurt strawberries and milk, and blend until smooth.


Goodness.



Spoon the mixture into small cups or use a popsicle mold. I used a Dixie cup and good old popsicle sticks.


Cover the cups with foil and insert the sticks. Freeze it for about 2 hrs minimum.



Now, blend the key lime pie and the spinach leaves. You can add a little milk too.



When the first layer is frozen, remove the foil and pour the mixture onto each cup. Freeze about 2 hrs or until they are frozen



If you prefer to add more layers or do the layering alternately... that's awesome too! Just make sure to freeze it completely in between layers so that the colors do not mix into each other.



They are too cute and most importantly it tastes really good. The girls didn't even know the green part has spinach on it.  Deceptively delicious!
