All moms would agree that , we all strive to save time in every thing that we do. I do lots of planning, whether will it just be a day trip for our family.. our weekends , our day agenda, from budgeting to meal planning.. I do my best. Sometimes, life happens and good plans gets thrown out the door..and that is when flexibility is necessary.
And how awesome it is when your "to do" plans actually goes smooth !
When I get a good look at our calendar and see those days that will be busy , I do some batch prepping and batch cooking . Sometimes , (when I have the energy)..I do freezer meals, some days I just pre cut the meats and vegetables , pre cook meats ( like ground beef).
I also prepare freezer friendly cookie dough, so I can just get it out of the freezer when we need a cookie or two maybe :)
This recipe freezes very well..
You can even make it in different variations. I made it three ways : with chocolate chips , plain peanbut butter oatmeal and lastly with pretzels.
You can make this in a big batch and use these as add ons: M & M's , walnuts , chopped rollo chocolate candy , dark and white chocolates. Be creative!
They are very soft and chewy!
Ingredients:
1 1/2 cups ( double for a huge batch)
1 cup quick cooking oats
1 cup peanut butter
1 cup softened butter
1 cup packed brown sugar
3/4 cup granulated white sugar
2 eggs
1 tsp vanilla
2 tsp baking soda
1 tsp salt
Variations: 1 cup chocolate chips, 1 cup pretzels
Directions:
Combine flour, baking soda and salt. Set aside
In a separate bowl, cream butter , peanut butter and the sugars together until smooth.
Add in vanilla and beat eggs in ( one at a time)
Stir in the flour mixture into the creamed mixture.
Mix in the oats.
Freezing part : Line your cookie sheet with parchment paper. Scoop dough and form into balls. Place all the dough balls into the lined cookie sheet and freeze for about 2 hrs. Transfer the dough balls in a ziploc bag ( freezer bag).
Baking day : Preheat oven to 350. Bake the frozen dough balls 10-13 minutes or until the edges are golden brown. Dont overbake. While soft on top , gently press variation of your choice ..chocolate chips M & M's or pretzels.
If you don't want to mess with the freezing part , that is totally fine. Just pre heat oven to 350 and bake for 8 to 10 mins, or until golden brown edges are visible. While soft on top , lightly press the variation of your choice.
