1 1/3 cups all-purpose flour (can use whole wheat flour or whole wheat pastry flour
1 1/4 rolled oats
1/4 cup granulated sugar
1/2 cup brown sugar
2 tbsp. melted unsalted butter
1/2 tsp salt
1-4 tsp cinnamon
1/2 cups coconut oil
1 tbsp 1% milk
1 tsp honey
Directions:

Preheat oven to 350 degrees. Line cookie sheet
with parchment paper or a silicone liner

Combine all the dry ingredients in a mixing bowl.
- Stir in the melted butter, coconut oil, milk, and honey. Thoroughly mix it, the mixture will be crumbly BUT moist.

Divide the mixture into 24 balls. Place the balls into the lined baking/cookie sheet

- Flatten each ball ( use the heel of your hand)
- Bake for 15 minutes or until it looks light brown. It may seem soft but will be crispy as they cool.
Did I tell you it's easy? It is homemade and all of the ingredients may actually be in your pantry already.

ReplyDeleteOk, we can find a ton of Belvita Soft Cookie recipes all over the internet but what about the Belvita Sandwich Cookies? Belvita Breakfast cookies are now too expensive to buy. They are now over $5.00 for a box and on my poor working class salary, they are now becoming a luxury food product like meat. I understand we are living in extreme inflation if not depression time but the closest recipe that I personally have come up with is Tea Biscuits/Cookies or sturdy Shortbread cookies and "slab" cinnamon or chocolate frosting in the middle. You can also use Nutela or peanut butter but that is about as close as I can come to the Belvita sandwich cookies. Can someone come up with at better recipe? I am tired of overpaying for my morning addiction.
ReplyDeleteExcellent recipe. I think these taste better than the commercial store bought ones. Not too sweet either. Perfect with hot tea or coffee. Made this several times. Husband loves them.

ReplyDeleteLeavening? I know they're not fluffy like a biscuit, but they're still good as they're made at my house. The recipe I use is the exact same thing as the blogger has posted here.
