Here's a quick, budget-friendly delicious dish. Pair it with homemade flour tortillas. I had been making our own tortillas for a while now, the hubby LOVES it. It is way better than the store-bought ones, soft and more delish.
Ingredients:
3 chicken breasts, cut into strips
3 tbsp olive oil
1 cup, onions ( cut into slivers)
1 cup each of green bell pepper, red bell pepper, and yellow bell pepper
2 cups cold water ( for soaking the onions)
Marinade:
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp onion powder
1/2 black pepper
1/2 tsp cumin
1/4 tsp salt or more to taste

Directions:
- If preferred, soak your onion onto a bowl of 2 cups of water. ( just to make it a little less strong)
- Combine all the marinade ingredients in a separate bowl.
- Toss the marinade and the strips of chicken together. Making sure that all the chicken pieces are covered with the marinade.
- Heat olive oil and cook the chicken in 2 batches. .. ( first half remove from pan, set aside.. repeat with the other half)
- Set the cooked chicken aside. Using the same pan, heat olive oil. Add the drained onions ( drain well). Saute until transparent about 2 minutes, then add all the chopped peppers.
- Add chicken back to the pan with the vegetables, Stir.
- Optional, squeeze lime on top, and serve with warm tortillas.
Quick, colorful, healthy, and easy.

HOMEMADE TORTILLA
Ingredients:
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1 1/4 tsp kosher salt
1/2 cup vegetable shortening ( or additional more tbsp, as needed)
1 cup hot water
Directions:
- Use a large mixing bowl, combine the flour, baking powder, and salt.
- Drop 1/2 cup of the shortening onto the flour mixture and cut the shortening until it crumbles. Use a pastry cutter or fork or your clean hands.
- Slowly pour the hot water onto your bowl ( flour with shortening mixture), Stir using a wooden spoon until it sticks to itself. If it looks dry and lacks moisture, adds in 1 or 2 tbsp of shortening. Add as needed. Knead, in the bowl until the bowl forms a ball and not sticky anymore. It shouldn't stick to the sides of your bowl.
- Using a tea towel or a clean kitchen towel ( I have used both), cover, and let the dough rest for an hour.
- Break the dough into 14-16 smaller pieces and make a ball. Cover the dough balls for an additional 30 minutes.
- Preheat a large nonstick skillet, Using a well-floured surface and a well-floured rolling pin, roll one dough at a time into a thin round shape ( tortilla shape).
- Place the thin dough into the hot skillet. You will know when it is ready to be flip when the dough is bubbly on top.
- Flip the tortilla and cook until golden.
- Wrap the cooked tortilla in a clean tea towel or put in a tortilla container to keep it warm
- Serve immediately.
You can make these awesome tortillas ahead of time or make a big batch for several meals. So good with soups too!
