Red Barn Chowder - A Bountiful Love

Red Barn Chowder

Soups are great comfort food for me. What I love about this soup is that , it is very filling. It has a little bit of sweet and spice to it . This is an inexpensive and easy soup to make. Serve it with warm honey wheat rolls or just plain saltine crackers.

Ingredients:

1 lb ground mild ( or hot) Italian sausage
1/2 cup chopped onions
1 cup chopped celery
1 green bell pepper, chopped
2 cups quartered zucchini
4 cloves, chopped garlic
28 oz stewed tomatoes
10 oz tomatoes with chilies
3 tbsp tomato paste
1 cup water
2 teaspoon dried basil
1 cup home cooked garbanzo beans  or 1 cup of canned garbanzo beans (drained and rinsed)
1/2-1 tsp sugar

Ingredients:

Chop your veggies.

Saute the sausage and the onion together for about 2 minutes,

Add in the celery, bell peppers, and zucchini, Saute until the sausage is no longer pink.

Add in all your tomatoes, also the tomato paste and water.

Mix in salt and pepper and dried basil. Cook until heated through and vegetables are all tender. Add in your sugar..this is to offset the acidity in all the tomato products..

Mix in garbanzo beans , just until heated through.

This soup serves 8 to 10. We are only four in our family so our leftovers is handy the next day.

A little sweet and spicy..who wouldn't like that?  A delicious soup that is filled with sausage and vegetables.
