Meatless Fridays : Black Bean Cakes

If you are craving for fiber rich comfort food without the guilt.. well..this recipe is for you! Black beans are very high in fiber, folate, protein, and antioxidants, along with numerous other vitamins and minerals. Ingredients:

2 tbsp olive oil
2 cups of Homemade Black Beans  ( can use store bought black beans)
1/2 tsp cumin
4 cups Homemade vegetable broth ( or chicken broth)
4 cloves minced garlic
1/4 cup cilantro, chopped
1/2 tsp salt

Directions:


Combine the black beans , cumin and broth in a large saucepan. Bring to a boil. Since my beans are already pre cooked , I just simmered it for a few minutes. If using canned or dry beans ( soaked overnight), once it boiled , reduce heat to low, partially covered and simmer until tender .


Drain the beans. Transfer to a bowl and mash the beans.  Stir in garlic, cilantro and salt.



 Form the mixture into balls. Flatten the balls to form cakes. Refrigerate for one hour.


 In a non stick frying pan. heat olive oil. Fry the cakes over medium heat turning only once. It is done when  you see a little crisp.


It is good with salsa,


Very simple but healthy and filling.
