Meatless Fridays : Crockpot White Chili - A Bountiful Love

Meatless Fridays : Crockpot White Chili

If you have one of those busy days and you are craving a bowl of chili that is very easy and a meatless meal, this Crockpot White Chili  is for you.  





Ingredients:

2-3 cups of frozen corn
2 cans of White Beans
1 4 oz can of green chilies
1/2 cup chopped white onion
1 tsp minced garlic
1 cup vegetable broth ( or chicken broth) -- I used homemade vegetable broth
juice from 1 medium-size lemon
1 1/2 tsp cumin
1/2 tsp Italian Seasoning
1 tsp black pepper
Salt to taste.
Cheese ( any kind ..I used Mexican blend)

Directions:

Put all the ingredients in your crockpot. Cook on low for 8 hrs or High for about 4-5 hrs. 

Serve it with cheese on top.
