We went out to have dinner for my daughter's birthday and wanted to stay on track with my health goals. I should not be shocked with the prices but with my health goals and financial goals, I could not help but to compare the prices of eating out and just making it at home. We rarely eat out though, however for the price almost $20 for a salmon dinner plate, I know I can make it cheaper and healthier because I can monitor the sodium.
This recipe cost me less than $20 and it fed a family of four for dinner plus leftovers for lunch. I shopped at Aldi. Some of the ingredients that I already have are salt and pepper, extra virgin olive oil, fresh dill, and dried oregano.
Ingredients:
Extra Virgin Olive Oil1 to 1.5 lbs. of Salmon
1 lemon (juice and zest)
Fresh Dill. finely chopped
Dried oregano
4-5 garlic cloves, diced and chopped finely
Salt and pepper to taste
Directions:
Place the rack in the middle of the oven. Pre heat oven to 400 degrees.
Make your marinade by whisking the lemon, lemon zest, dill, garlic, salt and pepper in a bowl.
Pat the salmon dry. Coat the salmon.
Bake the salmon for 10-12 minutes until flaky. Internal temp should be 145.
Optional: Sprinkle with lemon zest.
Serve with a bed of salad or rice.
