I love how simple and frugal this recipe is and yet very tasty. Serve it with hard tacos or tostadas and your favorite toppings such as shredded lettuce, salsa, guacamole, or beans! Here's the cost breakdown (from our local Aldi).
Chicken breast (3 pcs) $2 - I bought a whole tray of chicken breast of $12. I used the other chicken breast for a crockpot chicken teriyaki.
Diced Tomatoes .79 cents
Taco seasoning .99 cents - You can use my Homemade Taco Seasoning
Shredded Cheese 2.79
Hard Taco shells $2
Shredded lettuce $1.99
TOTAL: $10.56
We are a family four, it will be $2.64 per meal. We also had leftovers which my husband packed for lunch the next day. Depending on your desired topping, you can still make this meal cheap.
Ingredients:
Seasonings: Taco seasoning, salt, and pepper. Use my Homemade Taco SeasoningDiced tomatoes
1- 1/2 cup water
Shredded cheese
Chicken breast (I used 3 large chicken breasts)
Flour tortilla or hard taco sells
Optional Toppings: shredded lettuce, salsa, guacamole, beans
Directions:
Place the chicken breast in the crockpot and pour the diced tomatoes, water, and taco seasoning. Cook on low for 6-8 hours or on low for 4-5 hrs. For the Instant Pot option, cook on high pressure or 10 minutes.
Serve on hard taco shells or soft tortillas. Top with cheese and shredded
lettuce, or any topping of your choice.
SUGGESTED SIDES: Chips and fruit, your favorite taco toppings.
