Perfect for busy mornings! On Sundays, I will make a big batch of these easy and kid-approved pancake bites, a great quick and on-the-go breakfast. You can boost the protein in these pancakes by using a protein pancake mix or adding your favorite protein powder to the mix. There are endless ideas for min-ins with these pancake bites, you can add fruits, Nutella, chocolate chips, nuts, peanut butter, fruit spread, cooked sausage, or even crumbled bacon!

Ingredients:
Pancake Mix plus the ingredients to make the pancake
Favorite toppings or mix-ins: sprinkles, chocolate chips, fruits like blueberries, spread.
Directions:
Preheat the oven to 375 degrees. Make the pancake muffins by following package instructions. Fill the muffin cups with the batter. I love using my Silicone Mini Muffin Pan (Amazon Link). I used a tbsp measuring spoon to scoop my pancake batter,
Add your favorite mix-ins or toppings, Bake for 15 minutes, Let it cool before removing the pancake bites from silicone mini muffin pans.
Is these pancake bites freezer-friendly? Absolutely. I will suggest that you thaw the pancake bites inside the fridge the night before you want them for breakfast. Pop 'em in the microwave for a few seconds the morning that you are having them.
