Recipes to try: Turkey Chili and Lentil Sloppy Joe
Here are an easy, frugal, and healthy crockpot black bean and butternut squash chili recipe for you. You can use a 5qt. slow cooker and this recipe make 10 servings.
Ingredients:
5 cups butternut squash, peeled and cubed
1 chopped, medium yellow onion
2 tbsp of olive oil
2 cloves, minced garlic
1 cup, chopped red bell pepper
2 15 oz, low sodium black beans, rinsed and drained. I used homemade black beans.
1 14oz can crushed tomatoes
2 tsp dried parsley flakes
1 1/2 tsp dried oregano
1 1/2 tsp cumin
1 tsp chili powder
salt and pepper to taste.
Directions:
If you are lazy like me, you can buy these peeled and cubed butternut squash at Trader Joe's. It is less than $2 a bag.
In a large skillet, saute onion, red bell pepper, and garlic in olive oil. Until the onions are translucent and garlic is fragrant.
Put all the remaining ingredients into your slow cooker and mix in the sauteed onions.
Cover, cook on low for 4 hrs. or until the vegetables are tender.
Protein-rich and hearty chili!
