Kale Stew - A Bountiful Love

Kale Stew

Do you know the difference between a soup, a chowder, a bisque, and a stew?

A BISQUE is a thick,  very rich and pure soup of cream and seafood. Though it can also be made from poultry or vegetables.
A STEW is a thick dish that has meat and vegetables or just vegetables. The thick liquid from the stew is the result of stewing liquid combined with the natural juices of the meat and vegetables being stewed.
A SOUP is any combination of vegetables, fruit, meat or fish cooked in any form of liquid (ex. broth or tomato sauce with a thinner consistency.
A CHOWDER is a thick,  chunky and rich soup.

So there you go, now you know just what the difference is between all of this goodness! It is probably irrelevant information but hey new info won't hurt. Here's a healthy and budget stew recipe for you. Just in time for the fall season!

Ingredients:

1 large bunch of  kale- wash thoroughly, cut the stems and chop (preferably organic)
1 tbsp dried rosemary
1 tbsp dried thyme
1 tbsp ground turmeric
1 cup dry lentils
2 cups homemade  red kidney beans ( or use 1 15oz can low sodium kidney beans, rinsed and drained)
3 cups homemade chicken broth (or use store-bought low sodium chicken broth)
1 28 oz can diced tomatoes, do not drain
1 1/2 cups, chopped celery
1 cup, chopped onions
3 minced, garlic cloves
2 cups, chopped carrots
1 package of portobello mushrooms
1 bay leaf
salt and pepper to taste

Directions:

Prep , wash and cut all of your ingredients.

Using a larget pot, combine all the ingredients except for the mushrooms and kale.
Bring to boil and let it simmer for 20 minutes.

Add the mushrooms and the chopped kale.
Let it simmer for another 10 minutes or until the lentils and kale are cooked.

This is optional if you want to make the stew thicker. You can take a cup or two of the stew and process it in a blender. Placed the pureed stew back into the pot

Add salt and pepper to taste.

One cup has 241 calories and 14 g of protein!

A hearty stew and budget friendly too!

Don't forget to pin and share!!
